A German Eisbock is an extra-strong Doppelbock that is created by freezing the beer and removing some of the ice that forms. It will have good carbonation and good head retention. The alcohol content of this beer is only limited by the amount ice removed during the freezing process. Without remove any ice the beer will be about 8.8% alcohol.
